BUMPDATE | 36 weeks

How Far Along? 36 Weeks

Weight Gain: 30 lbs

Maternity Clothes?Β Yes definitely. I fit into about 3 things at this point .

Sleep? It’s starting to get pretty bad, and I can’t seem to get comfortable in any position anymore.

Best moment this week?Β Realizing I have 3 more weeks of work until this babe comes!

Weird pregnancy moment? The infamous forgetful pregnant brain. Left the dog at home and forgot to close the bedroom door…aka 3 pairs of shoes got chewed 😦

Movement: Lots! Since she is running out of room in there it is more of her rotating & adjusting herself rather than her kicking me.

Food Cravings: Cereal & almond milk. Especially cinnamon life.

Anything making you queasy? nope!

Gender: A GIRL!

What I’m looking forward to:Β  Meeting this baby! This pregnancy has been a piece of cake & I feel very lucky to have gotten to carry this baby inside me, but I am ready to not be pregnant anymore.

How Far Along? 31 Weeks

Weight Gain: 25 lbs

Maternity Clothes?Β Yes definitely., even some of my beginner maternity clothes don’t fit anymore. I am becoming very pregnant & large and in charge!

Sleep? Still sleeping pretty well, besides the 4 bathroom trips per night.

Best moment this week? Having my mom in town for thanksgiving! She and I completed the nursery and now all I want to do is sit in there and daydream about Blake!

Weird pregnancy moment?Β Momentarily forgetting I’m pregnant and trying to get out of bed like a non-pregnant person. Doesn’t work so well, it is better when I roll off the bed as I have no more ab strength these days.

Movement: All the time! She is a wiggle worm. Luckily I am carrying pretty low so I have yet to feel any kicks in the ribs.

Food Cravings: Nothing in particular, just hungry all the time.

Anything making you queasy? nope!

Gender: A GIRL!

What I’m looking forward to: Being pregnant over the Christmas holiday and meeting this baby in a few short weeksΒ

BUMPDATE | 21 weeks – It’s a GIRL

How Far Along? 21 Weeks (posting this a couple weeks late)

Weight Gain: 9 lbs

Maternity Clothes?Β Yes definitely, but about 50% of my pre-pregnancy clothes still fit!

Sleep? Still pretty solid but I have occasional restless nights.

Best moment this week? Finding out the gender!

Weird pregnancy moment? I have never been forgetful before this pregnancy & I have been forgetting things all over the place. Last week I left my brand new RayBans at a restaurant and when I called the next day no one had turned them in! YOU GUYS, Baby Brain is a real thing!

Movement:Β Yes every so often (usually in the morning) & Josh finally felt a sweet little kick too πŸ™‚

Food Cravings:Β Yogurt, ALL the yogurt.

Anything making you queasy? nope!

Gender: A GIRL!

What I’m looking forward to: Seeing this belly/baby keep growing

BUMPDATE | 16 weeks

How far along? 16 weeks

Baby’s size? Avocado…4.6 inches long and 3.5 ounces

Total weight gain: About 7 lbs

Maternity clothes? Not yet…but my pre pregnancy clothes are REAL snug so I will be wearing maternity clothes any dayΒ  now.

Stretch marks? None yet.

Sleep: Sleeping like a baby as usual, minus the whole peeing 2-3 times a night thing.

Best moment this week: Feeling little flutters/bubbly feeling when the baby moves.

Miss Anything? Coffee, always coffee. Drinking decaf just isn’t the same y’all.

Movement: Little fluttery feelings, that’s about it.

Food cravings: Anything spicy & or doused in hot sauce for the whole pregnancy so far. Also, I have random cravings each day that are always changing… yesterday was hash browns, so I took a solo trip to a local diner for lunch and got me some hash browns, covered in hot sauce of course.

Anything making you queasy or sick: Nope, no morning sickness the whole pregnancy, praise the Lord! But the heartburn that everyone has talked about during pregnancy is starting to rear its ugly head. Guess I’m going to have to start taking it easy on the spicy foods now, NOOOOOO.

Gender: Don’t know yet!

Belly Button in or out? In.

Wedding rings on or off? Still on, no swelling yet!

Happy or Moody most of the time: Eh, I’m going to say mostly moody/emotional. My poor husband.

Looking forward to: Finding out the sex in 4 weeks!

Durango is a beautiful, little, hidden gem in southwest Colorado. My husband & I went on a trip here a couple weeks ago and had a great time. For a town of only 17,000 people, Durango has quite an array of GOOD food. Josh & I give two thumbs up to these restuarants: Jean Pierre’s Bakery,Β  Bread not Bombs Bakery, Oscars Diner (green chile hash browns, nuff said), Steamworks Brewery (GET THE KIMCHEE BURGER, I promise it won’t disappoint). In addition to great food, Durango has breathtaking mountain views, a gorgeous river that runs through the whole town, lots of awesome parks and hiking trails, a little university (Ft. Lewis College). I recommend putting Durango on your travel bucket list if you have not yet been there.

Here are a few iPhone pictures from our trip.

Shepherd’s Pie

I have added (in parenthesis) possible Whole30 swaps for this recipe.

*note: I did not make this Whole30 style so I am not sure how it will turn out. Please share in the comments if you tried it/what worked & didn’t work!

– 1 LB ground beef
– 1 onion – diced
– 1 zucchini – chopped
– 1 tsp chopped garlic
– 1 TB olive oil
– 1 tsp onion powder
– 1 tsp pepper
– 1 tsp garlic salt
– 1/4 tsp dried thyme
– 1/4 tsp dried rosemary
– 5 yukon gold potatoes
– 3 TB butter (ghee)
– 1/4 cup half & half (coconut milk)
– dash of salt & pepper
– 2 TB butter (ghee)
– 2 TB flour (coconut flour)
– 1 cup beef broth
– 2 tsp Worcestershire

Cut potatoes & boil for 15 minutes until tender. Drain. Return potatoes to pot and mash with butter, half & half, and S&P. (feel free to add whatever else you like to your mashed potatoes i.e. cream cheese, sour cream, milk, etc.) Do your potato thang however you like it!

While potatoes are cooking, heat onion, zucchini, garlic & olive oil in skillet over high heat for about 5 minutes. Add beef & all the spices (onion powder, pepper, garlic salt, thyme & rosemary) and cook until meat is completely cooked.

In a separate pan cook the butter and flour over medium high heat for 2 minutes. Whisk in beef broth and Worcestershire and cook for 2 more minutes until it thickens.

Pour gravy into meat mixture and cook for 5 minutes over medium heat.

Transfer meat into oven safe dish and top with potatoes. Broil on high for 5 minutes & serve.

Spicy Basil Beef

– 1 lb ground beef
– 1 bell pepper (any color)
– 1 jalapeno
– 1 TB oil
– 1 tsp chopped garlic
– Salt & pepper
– 1 TB fish sauce
– 1 TB coconut aminos (or soy sauce)
– 2 cups fresh basil
– 1 lime

Thinly slice jalapeno and bell pepper

Heat garlic, pepper, jalapeno, & oil in the skillet over medium high heat for 3 minutes

Add ground beef and salt & pepper, cook thoroughly

Once beef is cooked, drain any excess fat from the pan

Return to flame and add coconut aminos, fish sauce, & basil

Cover and cook for 5 minutes, until basil is wilted

Uncover, stir & squeeze lime over the beef.

Serve over rice if desired

Sweet Potato Hash

I have been known to do a Whole30 from time to time and this is ALWAYS a go-to recipe for me. I make a huge batch on Sunday & eat it every weekday morning with 2 over easy eggs on top. It’s also good when you’re not on Whole30 as well!

– 2 medium sweet potatoes
– 1/2 onion
– 1 TB coconut oil
– 1/2 tsp ground sage
– 1/2 tsp pepper
– 1/2 tsp onion powder
– 1/2 tsp dried basil
– 1/4 tsp salt
– 1/4 tsp dried thyme
– 1/4 tsp dried rosemary

Peel sweet potatoes and dice into small cubes & and dice onion
Heat onion and coconut oil in skillet over medium high heat for 2 minutes
Add sweet potato and stir so potatoes are coated in oil
Add all spices/seasoning and stir to coat potatoes
Cover and heat over med-high heat for 8 minutes
Uncover, stir & heat for 8 more minutes (stirring occasionally)

Storybook Baby Shower

This past weekend I hosted a baby shower for a dear friend/college soccer teammate of mine. Her & her husband are waiting until the baby is born to find out the sex, which I think is SO COOL…(probably because my inner control freak could never do that!) Anyway, Since I could not decorate the shower pink or blue, and since Anna is a 3rd grade teacher, I decided to go with a storybook theme.Β We had a bottle chugging contest & a diaper making contest. I also had each guest bring a book instead of a card to help get the baby’s library started. It was so much fun and it is always a hoot when us college teammates get back together and “party”

Here are a few pics of the celebration!

our americana wedding

My husband & I wanted to keep our wedding simple and fun, while still having a 200+ guest list. I know, I know…we have A LOT of family members & friends, okay πŸ™‚ But I’m here to tell you that an awesome & affordable wedding with a HUGE guest list is possible!

Our solution to this low-key/giant wedding was an Americana Theme. We planned (aka DIY’ed) and saved up for an entire year which helped reduce our stress levels the week of our wedding. Below are a few of the details:

Food: In & Out Food Truck (cheap & awesome!)

Registry: HoneyFund in lieu of a traditional registry. If you have never heard of a HoneyFund, it is essentially an account where your guests can “gift” you money toward your honeymoon (or wedding). It’s awesome.

Venue: The Newland Barn (vintage city building)

Alcohol: We served only beer and wine (that we bought ourselves)

Dessert: Homemade cookies & milk

Flowers: Local Florist Mulberry&Moss

Basically, our wedding consisted of 200 of our favorite people, dancing, burgers & beer! Is there anything better?

sidenote: if I can suggest anything to not skimp on, that would be THE PHOTOGRAPHER. We were given this advice beforehand and I am so happy we went with Katie Pritchard Photo ! Below are some our photos from the day.
